Rhubarb Pie! Home baked treat of the day at BallyCairn House B & B in Northern Ireland.

In recent days, the rhubarb crowns have burst into life in the vegetable garden at BallyCairn House. Thriving on a sunny, fertile site, formerly the compost heap, their large, umbrella leaves look stunning against the backdrop of Scawt summit on the Antrim Hills. Such a joy to harvest an armful of ruby red stalks to chop and stew a few minutes later in BallyCairn kitchen and bake a tasty pie for our guests staying here this weekend to enjoy. Dee has the most important role, ‘taste tester’ and has given today’s pie her seal of approval.
